Milk is considered a complete food because all of the nutrients important to fulfill newborn’s daily requirements are present, including vitamins and minerals, ensuring correct growth rate. A large amount global milk production represented by cow, goat, sheep milks; these species produce about 87% available over world. However, obtained minor dairy animal basic an family business in several parts nutritional properties from wide range have not been totally determined. Hot temperatures lack water feed some arid semi-arid areas negatively affect cows; countries, supply for local nomadic populations provided camels dromedaries. The quality South American camelids has still completely investigated, possibility creating economic resource people living Andean highlands must be evaluated. Both mare donkey milks show chemical composition very similar human milk, they represent good replacer cows’ infants nutrition, especially children affected cow proteins allergy.
